You can't beat a traditional apple filling topped with crispy, buttery crumble - classic comfort food at its best Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through. Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt. Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface – rub them in. Alternatively, pulse in a processor until sandy (don’t over-process). Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out. Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.

Panama’s indigenous Guna tribe have called San Blas home for hundreds of years. But the entire idyllic archipelago is at risk of being underwater within a matter of decades. Ever since I’d arrived in Panama, I’d been hearing about San Blas, an archipelago of more than 350 islands in the Caribbean Sea. The suggestions to visit came both from Panama locals and a friend back home in New York, who claimed a day spent boating around San Blas was by far the most exciting adventure she had during her travels.

If you’ve achieved your dream job, only to find it’s not as great as you thought, you’re not alone. You probably like the idea of it more than the job itself, Georgina Kenyon finds. As a child, I always loved animals. It’s something that didn't change as I grew older. So when the opportunity to take a break from journalism and volunteer at an animal sanctuary in Tasmania for three months arose, I jumped at it. I was certain it would be my dream job. But the reality of the work was quite different to what I had imagined. Instead of spending time each day getting to understand the animals and learn about them, I spent eight-hour days running between duties in the icy, winter rain, doing manual, sometimes heartbreaking, work. Many of the animals, such as Tasmanian devils and quolls, had been hit by cars and needed rehabilitation. I fed them, cared for them, avoided getting bitten — especially at meal times — and cleaned up after them. And, when they didn't survive, we buried them and felt their loss.

Two Muslim families hold the keys to the doors of Jerusalem's holiest church in order to keep the peace between three feuding Christian denominations. On a recent Sunday morning, Adeeb Jawad Joudeh Al Husseini was sitting on a bench just inside the sole public entrance to Jerusalem’s Church of the Holy Sepulchre. The doorway to the sprawling church, founded in the 4th Century, is where the 53-year-old Muslim has spent much of his life. His father, grandfather and dozens of generations of forefathers before them also dedicated most of their lives to sitting on this bench, guarding the church believed to contain the tomb of Jesus, Al Husseini said, pulling a 20cm-long iron key out of his leather jacket’s inner pocket.

Plans to keep a record of UK citizens' online activities face a challenge from tech firms seeking to offer ways to hide people's browser histories. Internet providers will soon be required to record which services their customers' devices connect to - including websites and messaging apps. The Home Office says it will help combat terrorism, but critics have described it as a "snoopers' charter". Critics of the law have said hackers could get access to the records.

On 28 October 1971, the bullet-shaped Black Arrow rocket blasted into the clear sky over the desert plain at Woomera in southern Australia. This launch of the British Prospero satellite into orbit was the culmination of more than 10 years of rocket development.

A team from a Devon university has managed what no British home nation has managed this summer - competing in a European football tournament's finals. The University of Plymouth team is taking part in Euroby 2008, the robot football equivalent of Euro 2008, also being held in Austria and Switzerland. The university side consists of three humanoid robots, each one operating independently with an onboard computer.

On the BBC’s Weekly Politics programme on 9 December 2010 the historian David Starkey commented on the tuition fees protests in London that day that the capital had seen nothing like it since the Chartist period of the 1840s. Starkey is a historian of the 16th not the 19th century so he is hardly best placed to make an informed comment. However, the broader point was well made. According to some media coverage—for example the London Evening Standard—the student protests of late 2010 constituted mob violence and on occasion riot. While the fevered imagination of right wing journalists seeking easy headlines may not be the best historical benchmark, for much of the time since the mid-18th century—when the London “mob” makes its first real historical appearance—it has been a factor in shaping what took place.
